Ingredients
Vegan Southwest Quinoa Bowls
  • 1teaspoon extra-virgin olive oil
  • 1/2 oniondiced
  • 1 bell pepperseeded and diced
  • 1teaspoon salt
  • 1teaspoon ground cumin
  • 1cup uncooked quinoarinsed
  • 1cup salsaof choice
  • 1cup Water
  • 15 ounces black beans1 can drained and rinsed,
Toppings
  • Diced avocado
  • Guacamole
  • fresh cilantro
  • green onions
  • salsa
  • Lime wedges
  • Shredded lettuce
Instructions
  1. Turn Instant Pot® to Normal Sauté. Add oil and let heat for 1–2 minutes. Add the onion and bell pepper and cook until they start to soften, 2–3 minutes. Stir in salt and cumin and cook for 1 minute. Press Cancel. Add the quinoa, salsa, and water; stir. Place lid on pot and lock into place to seal. Press the Rice button, or cook on Normal Pressure for 10 minutes. Let the pressure release naturally, to make sure the quinoa completely absorbs the liquid.
  2. Fluff the quinoa with a fork and stir in the beans. Serve warm, with desired toppings.
